Quinoa provides higher content of essential amino acids than most vegetables and provides protein, unsaturated fatty acids, minerals (calcium, iron and magnesium), vitamins (E, B1, B2 and niacin) and phosphorus. It has the property of absorbing water, staying longer in the stomach and does not contain gluten.
